Honestly, Ninja Monkeys are worth less than you think. They're cool, but I wouldn't trade my Legendary pets for one. Stick with something common like a Unicorn.

Ninja Monkeys were part of a limited-time event in 2020, so they're quite rare. You could trade for some high-tier pets or items like a Neon Unicorn or a King Bee.

Ninja Monkeys are pretty valuable in Adopt Me! They came from the Monkey Fairground event, so they're rare now. Depending on their age and if they have tricks, they could be worth a good legendary, like a Frost Dragon or a Golden Unicorn.
