It makes the game more fun! You get stronger Pokemon, more items, and better rewards from raids and gyms. It's leveling up in real life, but with Pokemon.

From my experience, leveling up has given me access to better Pokeballs, more powerful Pokemon, and some cool in-game perks like faster healing items.
