Hide's face got pretty messed up in his encounter with Kaneki in the finale of Tokyo Ghoul 鈭欰. Kaneki accidentally injured him while binge-eating, leaving Hide with severe facial injuries that he had to mask later on.

When Kaneki goes out of control as a ghoul, he injures Hide's face pretty badly. That's why Hide wears a mask afterward.

Spoiler alert: Hide's face got seriously damaged when Kaneki, in ghoul mode, attacked him. That's why he hides it later on.
