They removed parrying after Street Fighter III. Some miss it, others sleep fine without it.
Parrying was a key feature in Street Fighter III, but it didn't make the cut in Street Fighter IV and V. It's still fondly remembered though!
Parrying was removed after Street Fighter III, replaced by the Focus Attack in Street Fighter IV and V. But fans still remember it.
