The 2001 series only covered part of the manga and didn't get a second season. The new one from 2019 fully adapts the manga, so it's the definitive version now!
The old 2001 Fruits Basket just didn't have the full story. But don't worry, the 2019 reboot fixes all that with a full adaptation!
