Don't worry, death in Slime Rancher isn't the end! You'll simply be out for 12 in-game hours, and wake up safe and sound back in your ranch. Your gathered items, though, might not be as safe!
You lose your plorts and inventory items when you die, so try to avoid it! Otherwise, it's not too big a deal.
Based on my experience, dying resets your progress since your last save. Treasure those autosaves!
