The iconic sound of Super Mario 64 mostly comes from a mix of synthetic orchestra and MIDI instruments. Koji Kondo composed the music, and he made epic use of trumpets, strings, and piano sounds!

Synths and MIDI. You can hear it all in Koji Kondo's ingenious work.

Super Mario 64's music was mostly synthesized using MIDI, but you'd swear it sounds better than some real orchestras!
