Monkeys are pretty sought after since they're from the Monkey Fairground event. You could probably get a nice ultra-rare pet, maybe a Koala or Shiba Inu.
A regular Monkey in Adopt Me is usually worth around a rare or ultra-rare pet in trades. Think along the lines of a Bee or Red Panda!
From my experience, I traded my Monkey for a Neon Bunny. It totally depends on who you're trading with and what they're looking for!
