In Dragon Ball, non-canon stuff basically refers to anything that doesn’t fit into the main storyline created by Akira Toriyama. Think most of the movies, Dragon Ball GT, and some filler episodes!

Anything not directly touched by Akira Toriyama himself is usually considered non-canon. This includes Dragon Ball GT and most of the movies, except for the newer ones like 'Battle of Gods' and 'Resurrection F'.

A lot of the original Dragon Ball Z movies are not part of the main storyline. They’re fun to watch, but don’t take them as part of the official story.
