When you're shipping just a single Pokemon card, you basically want to aim for an envelope size that fits a standard card sleeve comfortably. We're talking about something like a 3.5" x 5" or a 4" x 6" bubble mailer. This gives enough room for the card, toploader, and sleeve without bending.

From personal experience, I always go with a 3.5" x 5" bubble mailer for single cards. Adds a bit of protection and ensures the card arrives in mint condition. For multiple cards or something more valuable, bump it up to a 6" x 9" to fit everything comfortably without forcing cards into too tight a space.
