What order do I watch Gintama in?

I recommend you watch in this order: Gintama (Episodes 1-57), then Gintama' (Episodes 202-252), and Gintama: Enchousen (Episodes 253-265). Go back to Gintama (Episodes 58-201) and then watch Gintama (2015, 2017, 2018 seasons). Finally, wrap it up with Gintama: The Final Movie.
