Honestly, just sort them in the way that makes you happiest. Alphabetically, by color, your favorite ones in front - you do you. But yeah, if you're going for the official way, it's by type and Pokedex number for the Pokemon.

Original Pokemon cards typically follow a specific order in a set: first come the Grass-type, then Fire, Water, Lightning, Psychic, Fighting, Darkness (if it was part of the set back in the day), Metal, Dragon, Colorless, Trainer Cards, and lastly, Energy Cards. Each type is organized by their Pokedex number if they're Pokemon!
