I've watched Gintama twice! Here’s my take: Begin with episodes 1-57, then the Benizakura Arc (episodes 58-61) or the first movie. Continue with episodes 62-201, after which you should watch 'Gintama: The Final Chapter'. Then, it's episodes 202-265, followed by 'Gintama: The Final'. Finally, catch episodes 266-367. I just watched Gintama in the order it aired, and it all made sense. The movies are great, but the series is the best part!

Honestly, just go in release order! Start with episode 1 and keep going. The movies fit in with some arcs, but it’s less confusing if you binge everything.
