If you want to watch Gintama in its original release order, start with Episodes 1-49 (first season), then proceed with the second season (Episodes 50-99). Follow up with Gintama': Enchousen, then Gintama (2015), and finally Gintama (2017). Don't forget the movies in between: Gintama: The Movie comes after Episode 57, and Gintama: The Final should be watched after Gintama (2017).
