exFAT is the way to go for the Steam Deck. It's compatible with Windows, macOS, and Linux, plus it supports large files.
From my experience, exFAT works best. I've been able to load all my games without any hiccups.
NTFS is also an option, but exFAT is generally preferred for better compatibility.
