In my experience, I've seen many games drop at midnight Eastern Time, too. Seems like it really depends on the publisher and the hype around the game!

Steam games typically unlock at 10 AM Pacific Time on their release day. However, it's not set in stone鈥攑ublishers can choose different times, so always check the game's Steam page for the exact timing.
