One Piece episodes usually drop on Saturdays at 9:30 PM JST (Japan Standard Time). If you're somewhere else, you might have to do a little time conversion. For example, that's 8:30 AM EST for those on the East Coast of the USA. Crunchyroll usually has the episodes up pretty quick after they air in Japan!
