As someone who watched both, I can tell you Kai's updated animation and audio (including new voice recordings) make it a fresher experience!
DBZ Kai is basically a remastered and condensed version of the original Dragon Ball Z. They cut out a lot of the filler episodes and improved the picture and sound quality. It's like getting straight to the action, no detours!
Dragon Ball Z Kai has way fewer episodes because they trimmed down the filler content. It's a more streamlined experience for the story purists.
