Well, kinda depends on what you mean by 'end'! The TV series wrapped up in 2018, but the last movie, Gintama: The Final, came out in 2021.

Gintama anime technically ended on October 7, 2018, but don't worry, it came back with two more movies! The grand finale, Gintama: The Final, was released on January 8, 2021. So there's a lot of Gintama to binge!
