Pokemon GO generally switches to night mode around 7 PM and stays that way until around 7 AM. But it can vary a bit depending on your local time zone and daylight savings.

From experience, it turns to night around 7 PM. Seeing the game world go dark makes it easier to spot ghost types!

I think it's based on your local sunset time, so check your local sunset and it should turn to night shortly after.

It usually turns to night around 6 PM to 6:30 PM. At least that's what I've noticed where I live.

Honestly, it changes with the seasons. During summer, night mode kicks in later, closer to 8 or 9 PM. Just notice when the in-game background shifts.
