Honestly, everyone complicates it. Priority means you can do stuff. Your opponent can do stuff after you. That's it.
In Magic The Gathering, priority passes whenever players are adding things to the stack or resolving spells and abilities. Basically, after you cast a spell or activate an ability, your opponent gets the chance to respond. This goes back and forth until both players pass priority without taking any actions, then the top thing on the stack starts to resolve. It's like a polite conversation where you wait for your turn to speak!
