Robin officially joins the Straw Hat crew at the end of the Alabasta Arc. That's around episode 130 of the anime. After a whole lot of drama and a battle that would make your grandma jump out of her seat, she kinda just invites herself in, and Luffy, being Luffy, is all like 'Sure, why not?'

Ya'll forgetting the manga readers here! Nico Robin joins the Straw Hats in Chapter 218. It's pretty epic, not just a simple 'Hey, can I join?' but a whole saga leading to her becoming a crew member.
