Target usually restocks Pokémon Cards during the weekdays, particularly on Tuesdays and Fridays. It's best to get there early in the morning since that's when they tend to put out new stock. But keep in mind, it can vary from store to store, so calling your local Target might give you the most accurate info.

I heard from a buddy who works at Target that the restock days for Pokémon Cards can really depend on the delivery schedules and how quickly they sell out.
