Honestly, it doesn't massively matter when you read Jujutsu Kaisen 0, but I'd say after you're a bit familiar with the universe. I jumped into it after the first few volumes of the main series, and it was like unlocking a secret level that made everything cooler.

I read JJK 0 right after the Shibuya Incident arc, and let me tell you, it was PERFECT timing. It gave me a deeper understanding of certain characters and the Jujutsu world. Plus, it was a nice breather with its own complete story. Highly recommend right there or before diving into the main plot.
