Honestly, it'll be back up when it's ready. Epic Games doesn't usually keep servers down too long.
They'll be back up once the llama wranglers finish their coffee break! Jokes aside, it usually takes a couple of hours. Keep an eye on the Fortnite Status page for real-time updates.
In my experience, servers are back up around 4 AM PST after maintenance. But it varies, so check Fortnite's Twitter for accurate info.
