I had the same issue last month. Contacting Epic Games support helped me out. They got back to me pretty fast and fixed the problem!

V-Bucks should appear once your subscription renews. If they don't show up right away, they might still be processing.

Make sure your subscription is active and that there were no payment issues. You can check your subscription status in the Epic Games account settings.
