V-Bucks are stored on Epic Games' secure servers, not in the game's local files. So, if you're looking to find them by poking around your game folders, you won't have much luck.

Stored on Epic's servers! You can't access them directly through the game's code.

I tried looking for V-Bucks in the game files once. Spoiler alert: you can't find them. Epic keeps that info secure on their servers!
