Hot take: Just trade with NPCs. Some of them swap stuff for diamonds. Less of a hassle than fighting Lynels if you ask me.

Honestly, just explore. I found a couple of diamonds just lying around in some random caves. It's like the game rewards you just for wandering around and taking in the sights.
