I've had the best luck finding Gible during special events and Community Days. Keep an eye out for those!
Gible usually spawns in mountainous areas or near bodies of water, so get your hiking boots on or head to the nearest lake!
Honestly, Gible spawns are pretty rare. You might have to rely on hatching 10 km eggs or catching them during special events.
