In GTA 5, you can't actually buy jewelry for your character to wear, but you can rob various jewelry stores during heists! For instance, the 'Vangelico' heist is one of the most iconic missions where you get to steal jewelry. If you're looking for that bling vibe for your character, you'll have to stick to the game's missions and storyline opportunities.

Actually, you can interact with jewelry in a big way through heists, like the famous Vangelico jewelry store robbery. Now, if you're talking about flashy chains and rings for your character, that sorta customization isn't a thing. But hey, robbing a jewelry store in-game? Pretty bling!
