Honestly, just wait for a heist mission, they'll pop up as part of the storyline. Chasing them down in free roam is a headache you don't need.

Bank trucks in GTA 5, aka Stockade armored trucks, usually spawn around the Pacific Standard Public Deposit Bank, downtown Los Santos. They also like to hang around the Go Postal Building and Paleto Bay's Blaine County Savings Bank. Pro tip: keep an eye on the road around these areas, especially during the day!

Just drive around the city! Seriously, the more you roam, the higher your chances of bumping into one. I found mine near the Vinewood Racetrack after hours of searching.

They're random, mate. But, hitting up the areas around banks and sometimes the police station in Vinewood can up your chances. Patience is key.
