Easiest way? Just roam around the wilderness areas. I bumped into a couple in the desert area while I was on a dirt bike. Didn't even know I was looking for them until one almost hit me in the face!

Just hang around the countryside, you'll find one eventually. Honestly, I think people make too big a deal of finding specific animals in the game lol.
