Honestly, just drive around the city. These trucks pop up randomly but keep an eye on those banks and gas stations. Sometimes it feels like they know you're looking and decide to play hide and seek. Patience, my friend.

Protip: Afternoon time in game is like money truck rush hour. They start spawning more frequently. So, if you're playing and notice the in-game time, make it your truck hunting time. Worked for me more than once!
