The easiest way is to go to Settings > Network > About. You'll see your IP address listed right there!
If you don't want to dig into menus, check your router's connected devices list. You'll find your Roku there along with its IP address.
Roku doesn't make it hard; it's all in Settings > Network > About. Trust me, I do this all the time.
