The escape ship in Subnautica is actually known as the Neptune Escape Rocket! You can start building it after obtaining the Neptune Launch Platform blueprints from the Rocket Island (also known as the Mountain Island).
Head over to the Mountain Island to get the blueprint for the Neptune Launch Platform. Once you have it, you can start constructing the Neptune Escape Rocket. Just watch out for Leviathans!
