Endura Carrots are like gold for your stamina in Tears of the Kingdom! You'll mostly find them near Fairy Fountains or in lush, green areas. Always worth nabbing a bunch when you spot them because they boost your stamina big time. Another hotspot is around the Great Fairy Fountain in the Tabantha region. Just sneak around, and you'll likely spot these shiny carrots sticking out of the ground.
