For the Big Score in GTA 5, you gotta be strategic with your getaway car placement. Choose a location that's easy for you to remember and can make a quick escape. A good spot is the underground parking lot on the southeast side of the Arcadius Business Center. Hidden and central, perfect for making a quick getaway without too much heat on you.
Honestly, it doesn't matter much. Just find a spot that's not too hot. I usually just pick a spot that's close to the mission but out of sight. Works fine.
The whole 'pick a getaway car spot' is overrated. Just go with what feels right. One of the underpasses near the freeway usually gives you a quick way to disappear though.
