If you're looking to lay low or just find a chill spot away from the chaos, the underwater hatch near the northern coast is pretty neat. It's a cool Easter egg and definitely off the beaten path. You'll need a submarine though!

Honestly, just head to the mountains, any of them. Most players stick to the city for chaos, leaving the natural beauty of the countryside pretty much to yourself. Bonus points if you find a cabin!
Raton Canyon is where it's at! Not only do you get stunning views, it's also less likely you'll run into other players. Perfect spot for those wanting some peace... or to hide from the cops.
Mt. Gordo for the win. It's got that eerie vibe with the ghost and all, but if you're into that stuff, it's super secluded.
Underwater cave. Not gonna spoil where, but it's out there. Dive in, find it, enjoy your solitude.
