Definitely go with Fullmetal Alchemist: Brotherhood. It's more faithful to the manga and has better pacing. Plus, it's packed with epic action scenes!

I've watched both, and honestly, you can't go wrong with either. If you want the complete story as intended by the creator, watch Brotherhood. If you're in for a unique alternative storyline, the original 2003 series is a gem too.
