The mythical Pokémon Arceus is still taking a nap and hasn't graced the game with its divine presence yet.
Some of the new forms and regional variants from recent games, like Galarian and Hisuian forms, haven't made their appearance yet.
Trust me, I've been on a quest for every Pokémon and the list of missing ones keeps changing! Kecleon is the most elusive, though.
As of now, Alolan and Galarian forms are mostly there, but Hisuian forms are NOPE. Check back later!
