It's likely that the green color in some fish is an adaptation for camouflage against the lush, green aquatic flora. Just like Earth, but with a sci-fi twist!
From my experience diving deep in Subnautica, those green fish really stand out in the kelp forests. Makes it easier to spot (and catch) them!
