It's a play on the word 'Ghoul,' since Doves hunt Ghouls. Just like a white dove symbolizes peace, they're meant to bring peace by fighting Ghouls.

They're called Doves because their uniforms and Quinque (weapons) have a white color scheme, resembling the bird.

Investigators get the nickname 'doves' due to their white clothing and the peaceful symbolism tied to doves, even though their job is anything but peaceful!

Investigators are called doves because of their white suits and weapons that resemble doves, symbolizing their purity and mission to protect humans.

The nickname Doves is ironic. They symbolize peace but they're in a violent world hunting ghouls.
