The fights in Mortal Kombat X seem hard because the AI in higher difficulties can be incredibly aggressive and unpredictable. Lower the difficulty if you find it too challenging.

I feel you! As someone who's spent hours getting whooped, I'd say mastering blocking and countering is key. Also, try to learn a couple of characters really well instead of spreading yourself too thin.
