Your items might be untradable because you obtained them from a Mann Co. Store purchase less than 7 days ago, or they might be promotional items which are often non-tradable. Check the item's description for trade restrictions!

Certain items in Team Fortress 2 are account-bound, meaning they can't be traded. I've got a few untradable hats myself from special events.
Some items just can't be traded. It's usually because they were earned through achievements, promotions, or special events.
Make sure you've enabled Steam Guard and have had it active for at least 15 days, as trading restrictions apply otherwise.
