Make sure you're logged into the correct Xbox Live account. Sometimes V-Bucks get tied to a different account than the one you're using.

Hey, happened to me too! Just log into your Epic Games account on a PC or mobile device to see if the V-Bucks are there. If they are, it might just be an issue syncing with your Xbox.
