Simple answer: It's a game, not a life simulator. Fallout Shelter's about building the ultimate vault and surviving the apocalypse, not dealing with the natural aging and death of your population. Keeps things less morbid and more on the strategy and management side of things.
Honestly, could you imagine playing a game where you finally train up the perfect dweller just to have them keel over from old age? Talk about a buzzkill. Bethesda knew what they were doing making sure our vault heroes are immortal, at least against the sands of time.
