Subnautica items often don't stack to keep the game more challenging and force players to think strategically about inventory management.
It's a gameplay decision to increase difficulty and realism. Imagine stacking submarines!
They *do* stack, just not as much as you'd like. Some items (like food and water) do stack, but not most crafted or large items.
