Demon Slayer ended after 23 volumes because the creator, Koyoharu Gotouge, wanted to wrap up the story in a satisfying and concise way. Quality over quantity, right?

Koyoharu Gotouge decided to end Demon Slayer early to maintain the integrity of the story and avoid dragging it out unnecessarily. Better to end on a high note!

The creator wanted to finish the story when it felt right rather than stretching it out. Smart move, IMO.

Sometimes the best stories have to end early to stay great. Demon Slayer is a perfect example of this.
