Assassination Classroom ended because the story reached its natural conclusion with Koro-sensei's arc. It's a complete package, folks!
Honestly, it ended because good stories need endings. Great story, but all good things must come to an end.
The series ended with Koro-sensei's assassination, completing the main plot. No cliffhangers, just closure.
