Why Did Attack on Titan Leave Netflix?
It's all about licensing deals! Netflix likely lost the rights to stream Attack on Titan when their contract expired. Happens all the time, unfortunately.

Licensing issues, plain and simple. These deals are time-limited and studios often move their content to other platforms.

Netflix always loses good stuff... sigh. It's likely a licensing thing where they couldn't keep the show on their platform anymore.
