Attack on Titan probably left Netflix due to licensing agreements expiring. Shows come and go based on contract renewals, and sometimes they just don't get renewed.
Licensing issues, plain and simple. These deals are time-limited and studios often move their content to other platforms.
Because Netflix has to abide by licensing agreements, which probably ended. It's why streaming libraries change constantly.
Netflix always loses good stuff... sigh. It's likely a licensing thing where they couldn't keep the show on their platform anymore.
